Mangeo

Mangeo is the hill where the estate takes risks. Every process trial — extended fermentation, honey, natural, anaerobic — is run here first, on parcels small enough that a failure costs a lot and not a harvest.

The ground breaks up more than on Tigre. Pockets of different soil, shade that thins and thickens across a few dozen metres, small terraces that ripen at their own pace. On a commodity farm that irregularity would be a problem. Separated lot by lot, it is the reason this hill produces the most interesting cups on the estate.

It is also the hill that decides what the rest of the estate will do next. A process that proves itself on Mangeo across two harvests is what we then take to the wider parcels.

The most expressive of the three. Where fermentation is pushed, expect stone fruit, florals and higher sweetness — and expect the profile to move between harvests, because that is the point.
